Today I have the most easy to follow recipe for you, I’m not sure I can even justify it as a real recipe. But when I put this meal up on my Instagram a few of you seemed to think it looked good enough to make yourself, so below you’ll find the minimal ingredients required.
Burning the candle at both ends (again) means I’m absolutely shattered. Happily, I’ve got a fairly quiet week planned after work each night, starting tonight with this healthy and RIDICULOUSLY easy grilled fish, veg and rice.
As you may have seen on my story earlier, I used the Riso Gallo* microwave rice for this meal. People are sometimes a bit elitist when it comes to products like this, and I know it’s not the same as cooking it yourself, but these bags are ready in 90 seconds, feed 2 and require no washing up. The pouch I’ve used is the Rice, Wheat & Buckwheat variety, but there’s also black rice and red rice to try if you prefer.
The hot sauce I used is from local mum and daughter duo, Tan Rosie, who together run a cookery school in Birmingham as well as sell products. I bought a few bottles of their Garlic & Pepper Sauce at the Good Food Show a while back, and I use this on chicken and salmon a lot as it’s got a proper kick and is an ideal cheat marinade if you’re short on time.
Lazy rice is how we do grains in my kitchen.. and I’m ok with it. Here’s my speedy salmon with three grain rice – recipe below.
Speedy spicy salmon and three grain rice (for two)
Ingredients
- 2 salmon fillets
- Tbs hot sauce (of your choice)
- 1 pouch of Riso Gallo Rice, Wheat & Buckwheat
- Veggies of your choice (I used broccoli and cauliflower)
Method
Split the sauce across the two pieces of salmon and leave to marinade for half an hour.
Pre-heat the grill and steamer.
Add vegetables to steamer. Place salmon under the grill, skin-side down. Both should cook in 8-10 minutes.
Salmon is done when the marinade is caramelising and the fish feels just firm to the touch when squeezed.
Tear the side of the Rice, Wheat & Buckwheat rice pouch and microwave for 90 seconds.
Serve – and have an early night because you need it.
